The Long History of Chinese Medicinal Gelatin

Gelatin for medicinal use is a water-soluble high-molecular substance obtained by moderately hydrolyzing and thermally denaturing collagen present in the body of an animal. It is a protein with a relative molecular mass of 2X104~4.5X105. It is the most important protein component in animal skin, bone and tendon, such as collagen in the collagen fibers of the dermal connective tissue, accounting for about 98% of the dry matter of the dermis.
Medicinal gelatin collagen is present in all animal skin and bone in the primary layout of the protein, collagen molecules are composed of three polypeptide chains, they surround each other, constitute a triple helix layout. In the α chain in the collagen molecule, the hydrogen bond existing between the carboxyl group and the amino group can exert the effect of stabilizing the triple helix.
With the increase of animal age, the covalent bond between collagen molecules makes the length of collagen molecules reach 3000nm and the diameter reaches 150 nm. Each alpha chain has about 1050 amino acids, a total of 20 kinds of amino acids are combined with each other.
